Shelf-space Allocation and Product Arrangement for Fruits Considering Facility's Temperature Distribution

Abstract

Quality deterioration is the main reason for the short shelf life of fresh food products. Temperature control means to reduce the quality deterioration rate. Nevertheless, the use of refrigerated facilities does not stop the quality deterioration process, but slows down the deterioration rate. Meanwhile, with limited capacity of refrigerated facility, retail had to store their fresh products that have different requirement of storage temperature. In other hand, within one facility, the distribution temperature is not uniform. Therefore, managing the fresh food within facility becomes challenging, especially for retail. This study aim to maximize retail's profit by determining the shelf-space allocation number of several products in refrigerated facility and product position within facility. Mixed integer linear programming model is used to solve this problem.
