abstract = "Anthocyanin is one of the natural dyes contained in the Butterfly Pea flowers. This flower is widely distributed in the world so that it can be used as an abundant source of natural dyes. The purposes of this study were to find the better type of solvent between 96% Ethanol and Distilled Water to be used in extracting anthocyanins from Butterfly Pea and to determine the optimum time of the maceration extraction process. Distilled water is a better solvent than 96% Ethanol in extracting anthocyanins from Butterfly Pea flowers, and the optimum time obtained for the maceration extraction process of anthocyanins from Butterfly Pea is 24 hours with the best results being 12 grams of Butterfly Pea with 200 ml of Distilled Water where Yield the obtained amount of 4,841 mg anthocyanin (as cyanidin-3-glucoside)/gram Butterfly Pea.",
